A Shuttle, once the solids drop off, is as smooth as an elevator while running on the LOX/LH2 engines. I hear the first stage of a Saturn 5 was kind of rough, too.

So far, no SpaceX or Blue Origin vehicles have carried passengers. The first recovered SpaceX Dragon capsule some years ago carried a cheese.
