From a density standpoint, it's plausible, but if the moon was really filled with liquid one would think that it would be squished out onto the surface at many points in frozen lakes and geysers. A moon with a liquid center constantly mushed around by tides would almost certainly have some evidence of this on the surface. I will continue watching Amalthea with interest.
