I've never seen any steam after it leaves the pad. The big puffy clouds of exhaust come from the SRBs. I think the SRB's must be soo bright compared to the SSME that you just don't see it as well. It's also bluer as I'm sure we all have noticed? Ablative nozzle indeed....

Did that beast not look unreal as it climbed into the sky?
