SpaceShipOne's pilots experienced a bit over 3 minutes of weightlessness, so an additional 90 seconds would give about 5 minutes worth. The whole point about the carnival ride style bars is that you don't have to strap into the seats. Instead, after burnout, you'd be able to float free of the chair in a matter of seconds. The ticket price includes a couple days of training, most likely with an emphasis on quickly getting back into the seats. From the article:
"Instead of shoulder harnesses and tight seatbelts we want this roller coaster-type bar that you fold out of the way and you can float around," Rutan said.
"We think that's important. If you want the view, we have handles there so you can float over and put your nose right against your own window.
"Or if you want to pull down your science tray and do whatever you brought along for an experiment, or play with your cat - you have bought the ride, you paid for it.
Personally, I don't think taking a cat along would be such a good idea unless it's doped up or declawed. Having a paniced cat reaching out with all fours could be rather uncomfortable, especially if it latched onto someone.*
It's possible the seats might be molded to the customer's body to increase security and improve resistance to G loads. The article did mention that they're looking into reclining seats to reduce the effects of G loads on the customers. SpaceShipOne's pilots had to sit upright to monitor the instruments and control the vehicle. That meant they were pulling several positive Gs (head to foot) as the vehicle decelerated. Reclining seats would change that to a transverse load (front to back across the chest) like what astronauts experience during liftoffs, greatly increasing people's ability to withstand the G loads. This is especially true for elderly passengers.
*Old joke: A man hears another man screaming in pain. He runs over and sees the victim with a cat dug into his back. The first man pulls the cat off the victim's back and tosses it to the ground. The victim turns around and slugs his rescuer in the face.
"What the hell? Why did you hit me?"
"You stupid son of a bitch! Don't you know you PUSH a cat off, not pull it!"
