Eating them green:
They're a bit of a chore to peel. You may need a knife.
Anyway, once peeled, slice into 1-inch chunks and place in a deep frier. You may have to roll them around for even cooking. When golden-brown, remove from the oil and place on a plate with paper towel. When slightly cooled, place on a glass or ceramic platter, with the pieces standing on end. Now, using a glass tumbler, press the chunks of plantain into flattened disks. Return them to the frier for a second cooking, again until golden-brown. When done, remove from the oil and place on a plate with paper towel and salt or season to taste. They're kinda surprising.
If your plantain have ripened to yellow, allow them to blacken a bit and sweeten, then peel. Cut them lengthwise into slices. In a skillet with a butter or margarine-based oil, fry them. While cooking, season with cinnamon and ginger. Great for a morning snack.
