Grits has a fairly twisted history, being cooked a variety of ways.

I don't really wanna start anything, but plain grits is a generally bland dish. To combat this, various greases were used as a cooking flavoring, with frying to alter the basic texture. Some homes still use these heart-stopping recipes.
