So...
Beethoven: all nine symphonies, but especially the Sixth
Borodin: Polovtsian Dances, On the Steppes of Central Asia, and the string quartet he wrote as a gift for his wife (I think it's #2).
Rimsky-Korsakov: Scheherezade
Prokofiev: Lieutenant Kijei; Festive Overture
Tchaikovski: Symphony #4
Moussorgski: "Pictures", of course! But also "Night on Bald Mountain". There's another orchestration of "Pictures" around besides the Ravel, by a Russian whose name I can't remember. I heard it on "Performance Today" some nine years ago...
Orff: Carmina Burana
Handel: "Water Music", "Royal Fireworks" and "Messiah".
Copeland: "Appalachian Spring"; "Fanfare for the Common Man"; "Rodeo".
Bach, of course (I'm reminded of an episode of M*A*S*H where the guys try to teach Radar to be smooth and intellectual... "Ah, Bach!") Anything at all by the Master, but I have a particlar nostalgic fondness for Stokowski's orchestration of the D-minor Tocatta and Fugue (cf. Fantasia)
Opera: I listened to a couple of seasons of "Live from the Met" on NPR before Texaco dropped their sponsorship, and began to develop a taste for it. Surprising at it may seem, I most enjoyed the two Wagner operas they staged: Parzival and Die Meistersinger.
Toll Brothers (yeah, the yuppie homebuilders) picked it up, and the 2006/7 season begins December 9.
