Islam's ban on graven images has a lot to do with it.
Since statues weren't really used, lots of work went into the detailing of buildings. Arches, domes, intricate scroll work, etc are all part of Islamic architecture. The Taj Mahal is a perfect example of this philosophy. The engraving is awe-inspiring.
