They do all kinds of things with them!
They can keep them in a Russian museum, or give one to a foreign museum (when an astronaut from another country was involved), or sell them....But lately I saw one in an exposition in Brussels and you could even get inside it and sit where the cosmonauts sat....Unfortunately, I didn't realize this at the time.
