The SSME and Vulcain engines use cold fuel to cool the nozzle. The RS-68 uses an ablative nozzle for cooling. The nozzle burning away is like water vaporizing off your skin and provides cooling. The nozzle ablating causes the orange flames and numerous flares seen during launch of the Delta IV.
