Does taste change in space?

I have read from several astronauts who say that the food tastes
blander than on Earth, and not just because it is freeze dried. They
always request condiments and spices to improve that area.

So is there really some kind of change either with the food or the
person eating the food in space, or is it purely psychological due
to the conditions?
