As with cars there is an optimum speed for fuel efficiency, and it's nowhere near the top speed. Check range v. speed on planes.
And pilots have some latitude. Went with a stewardess for UAL for a year or so - every once in a while she'd ask the pilot to "step on it, I have a date tonight." I thought that was funnier than hell!
