The biological mechanism is that if the body does not recognize the molecular structure of biologically altered foods, the body may have an allergic reaction to them. While mild in most cases, food allergies can set up a whole system of body failures that are damaging. It is well-known that food sensitivities and allergies can cause the intestines to not process vitamins and minerals properly and to cause "leaky gut" syndrome.
Food enzymes do help the body digest food. That is why it is recommended that you BEGIN a meal with fruit. Pineapple is one of the strongest digestive aids. Also, certain herbs will promote the beginning of the digestive process. That's why the French eat salads with herbal components before a meal. Get the juices flowing. I tend to eat a lot of fruit before meals. However, as we age, the body may need more assistance than that. I find that now that I've been taking digestive enzymes for a long time, that eating fruit before meals is now sufficient. IOW, I've put my body back into homeostasis as far as digestion is concerned.
