It would be better if we called people what they want but often the those that are "outraged" are white, guilt ridden virtue signallers.
Then there are people who say it's racist simply to make the distinction. "People of color" is apparently inoffensive enough.
I remember a time in the mid 70's when it was okay to "celebrate the differences".
