I believe Cassini is able to see the dark side of Saturn by reflected light off the rings. The rings are extremely reflective (water ice)and there are two large parts of them )each about 10-20 degrees which can "see" both the sun and the Saturnian night side. And there is also reflected light off other parts of the ring which can make a two-surface reflection onto the dark side.
Note that in this Don Dixon painting, the artist has not painted the rings to be in total shadow.
