The Carl Sagan Book - not the much lighter-weight film - discussed multiply-encrypted SETI signals which involved, amongst other statagems, polarisation modulation.
It is certainly routine in astronomy to measure the polarisation of sources, although this does not significantly change over time, to my knowledge.
