Transit should be the word, not eclipse.
Other than from Earth, I've read it could be possible to see an eclipse (with a world matching the apparent diameter of the sun) on Io when another Moon hides the sun, but then the Sun is much smaller than as seen from Earth and the event is much faster; Also, from Neptune, Miranda can produce an eclipse, even faster!
But ifrom our planet, it's the most interesting!
