It's like the rock we saw a while back that was shaped like a housebrick - but empty - just the walls left.
Any mineralised surface is capable of eroding either faster or slower than the original rock. If faster, you don't see it. If slower, you get blade-like remnants. Remember the "Shark teeth" along the cracks in Endeavour crater?
