What version of ACAD are you running?
E-Transmit (Pack-n-go from Express tools in older versions) will tell you what fonts are being pulled as it creates a zip file of everything the drawing needs.
I do a lot of ACAD to Adobe and have never had problems with the fonts since ADobe 5 came out. Before that I got weird stuff happening to my fonts.
ARe you using SHX Fonts or true type fonts. Adobe will like True Type better since that's what the world uses. SHX is only useable in AutoCAD. However I haven't had any recent problems with SHX fonts either.
As far as colors. If you are using R2004 or higher, there's a pretty neat way to use color. I keep all my linework in the 1-255 range since my printer will print those out as black lineweights as is normal using color dependant plot styles. Then (only with 2004 or higher) you can use colors from the millions of color range or palletes like Pantone. These will print out in color regardless. It is a good way to keep your lineweights perfect and have the benefit of color fills or lies as well. Plus the single color or dual color gradient fills can provide a hint of depth. I believe all these are RGB.
Doing colored elevations of buildings used to take me more than a days work exporting out of AutoCAD and into Corel Draw. Now I can do it all in AutoCAD using the commands I'm most comfortable with in a couple of hours. I love it.
As far as printing colors goes. Every damn printer prints differently. This is a huge frustration for me and all my printers are Hewlett Packards. I would expect all HP's to be close at least. I still end up doing proofs when the colors have to be dead on. I don't know how to get around this.
