"Weed" ethanol
You're right in theory, but cracking ethanol (or methanol) from cellulose is a lot harder than cracking it from sugar.
There are a lot of people working on this, and I'm hopeful for results soon, but the sugar process is well-developed already, and unfortunately, already has a major political lobby.
