I mainly compost with worms, so not true composting. Never gets hot enough but it is beautiful dirt once sieved. Dug it out a few weeks back and all the worms were in a ball in the middle. Kind of gross but who cares.

I'm not a stickler on ratios, but usually 50/50 with old dirt from pots. Tomatoes can handle a bigger compost ratio, in fact they love it. So can potatoes. If you think you need more nitrogen, add some chicken shit.

You can also dig a hole, put immature compost in the bottom, then add a plant with dirt. It'll mature.
