Stellar engineering
Perhaps there will be the profession of Stellar engineering. Restarting dead stars may be an option. To do this, finding a way to convert a stars matter back to hydrogen might work. Then again, they might see stars as being big waste of energy and they might prefer creating their own energy in a less wasteful manner. Of course, this will only work if the universe expands forever.
