Refraction caused by the atmosphere as the sun or moon nears the horizon is responsible for the appearance of an elliptical shape. If you look at many telephoto shots of the sunset, the effect is obvious.
I would think the horizon alone gives the brain reason enough to make the sun or moon appear "larger," without the need for other references.
