John Walker is a perfect example of what you are saying.
Still, the fact is most of the perpetrators have been obvious ethnic types. Clean shaves and cologne does not hide the swarthy appearance and obvious middle eastern background.
Profiling is not perfect by any means but the point is to get as much bang for your buck as possible. Checking the shoes of grandmas and middle aged white males is probably a waste of resources unless you are capable of monitering every passenger without the system breaking down.
