Just as true for un(der)educated poor white folks, too. Appalachia is where I have the most recent, direct experience in this... but as I recall from my childhood in another part of the country, it was just as prevalent among my adult neighbors there, who pretty much had all immigrated from Eastern Europe after WWII. There's a mindset which says "Fat means wealthy;" that is, you're obviously not starving through lack of money if you're carrying 50 to 100 extra pounds, or more.
