The terms can be applied either biologically or culturally. Humans can nicely digest either meat or most vegetables. Humans are biological omnivores. A human cultural vegetarian can eat meat, but just chooses not to. This requires paying more attention to nutrients, but it can be made to work just fine. A cow can't eat meat at all. A chimp can eat either. I don't think cats can digest vegetables, but I'm not sure. As you describe your fictional species, they can digest either meat or vegetables (biological omnivores), but choose to eat one or the other. Most in your story choose not to eat meat.
