Freezing of an icy moon with a slushy core. Volume expansion. Cracking. For the right sized moon, a single equatorial crack may form. Slush oozes out. Instant mountains.
If the crack doesn't form equatorially, it ends up there anyway due to polar wander with an uneven mass distribution.
Still pretty weird, though...
