I like to have good Scotch in good, Dark cocoa.
Yes, try also dark bitter chocolate truffles together with a sweet and spicy heavily sherry-cask influenced Highland single malt. I suggest Abelour Sherry 15, Abelour A'Bunudh (its hit-and-miss by the batch), Glenfarclas 12 or GlenFarclas 105 proof or McCallan Cask Strength with whatever dark chocolate you prefer. (all of those Scotches, BTW, are first-rate)
Don't use Islay Scotch. In fact, with possibly 3 distilleries excepted, don't use Islays for anything but Household dis-infectants. If you want to pay a lot for bad irish whiskey, buy bad irish whiskey and just send me the difference. (am I biased there? Scotch Snob? YES!)
This is probably one of the finest food-and-drink combinations I have ever found- next to, believe it or not, Scotch and very spicy Thai or traditional Mexican food (there is a reason some of the more aged golden Tequilas taste like whiskeys).
I have never had scotch IN hot chocolate... But I have a feeling I will be trying that soon.
