There really are tax accountants that specialize in only certain areas of tax...Obviously, some tax accountants specialize in Corp tax, some in individual tax. But within those specialties there are accountants who focus on the finer details of small segments of the tax code: For example Like-kind Exchanges.
Some accountants, me included, deal with taxes on only a cursory level for the most part...While we take taxes into consideration, we focus primarily on other specialties within accounting such as GAAP, Cost, Management, Consulting, and/or other areas of accounting.
There are general practicioners who will tell you they can do it all, but if you need heart surgery, I wouldn't go to one of them for advice!
