What we talking about in regards to vertical farming is mostly related to property value. Or cost per square ft in terms of renting or buying.
And the additional features/benefits of density.
Now, plants don't need hallways, stairs. elevators or stories/floors, though we need access to them in order to plant and harvest [and "maintenance"]. Much of this could be done robotically- designed from scratch specifically for automation.
So you take humans out the loop, so you don't need stairs, halls, etc. Though one is probably going to be some human access, because this structure isn't going made by robots/automation. The point is one can reduce human needs aspect of an building.
So, the building may not look like some office building.
Rails for automation, could replace "floors", there could
be "exposed" pipes everywhere. A few robots might perform all the tasks of a spefic task related to plants for entire building [moving around on rails].
But it all gets back to idea that up is "free" real estate, so therefore the best beginning market for such a thing is where property prices are high.
Though after such technologies mature, real estate prices may not be as important- the efficiency from density of such an farming operation could become the more significant factor.
