Tentacles, articulated mouth parts, multiple limbs (think of the things insects and spiders can construct) or even commensal or symbiotic organisms they breed and train to do that sort of thing for them, like we breed dogs to herd sheep, find drugs or pull sleds.
If they are aquatic creatures, gravity is not an issue. I've spent a lot of time trying to think outside the box of upright, bipedal, binocular, binaural striding monkeys with hands. Our own evolution on earth gives us plenty of alternative structures to perceive and interact with external reality. I suspect they will be so different from us we may not even recognize them as "creatures". I've talked here before of whole ecosystems evolving
sentience, think of rain forests or coral reefs as group minds, but operating at much slower speeds, but their tech may be able to operate much faster (just like our electronics operate much faster than we do),
And if they are weird, their tech may be even weirder. Maybe they use genetics, biology, chemistry and acoustics the way we use physics, mechanics, optics and electromagnetism. It is possible they use totally different tech than we do. Remember when we experimented with fluidics, a tech that substituted hydraulics for electricity? We gave up on it because our electronics was so advanced, but we never followed up on that whole line of engineering.
If I can think of these things, you can bet nature and alien intelligences will be able to do much better. I concede I can't imagine how a biology and tech wholly unlike ours could come up with space ships and radios, but those are my limitations, not theirs.
I have no way of knowing what an alien will look like, I'm not even sure if there are any. But when I think of one, I imagine something like a cross between a tarantula and a jellyfish.
Fictionally, the most convincing alien SF has come up with is Niven's Pierson's Puppeteer.

Like I said. They are going to be strange. How strange, I have no way of knowing. But I can guarantee you they WON"T look like this.
