Grooved grills are groovy. (originally from Comestible Zone)
For those that don't know, the grooves on the indoor grill pans give an extra special grilled flavor to steaks, chicken, etc. that flat grill pans don't. It has something to do with the air being able to circulate underneath due to the grooving plus it collects the juices in the grooves so you're getting a better sear. I've compared the two and it's very valid.
The following recipe should be worth trying when you're grilling out or using a grooved grill pan for the indoor stove top.
