Some industries choose not to patent their work, but to keep the results as trade secrets, like the formula for Coca Cola. While this leaves them open for someone to swipe their stuff, if they are careful it's safer than patents, which, after all, require you to make your process public.
At Rotary Rocket we pursued some patents, but primarily because patents tend to impress investors.
