Yes and no

Much of the Southern food you mentioned may have been first eaten because of the low cost and availability. It was introduced to the big house by servants but it was not an acquired taste, they really liked it.

My Grandfather preferred fried fatback for breakfast over bacon or pork chops. You couldn't pay me to eat it. The same goes for pigs feet, hog jowls, pig tails, chitterlings, scrapple, chicken gizzards and a dozen other local delicacies. On the other hand, grits, okra and poke salad are great veggies.

I pretty much consider Sushi to be bait but it can easily set you back a couple of hundred bucks at one sitting.

The point is, these foods are sold by grocers and served in restaurants to rich and poor alike. Our sensibilities evolve but check out the major carnivores when they make a kill. They don't usually go for the hind quarter.
