It's currently legal in most states to kill a person if they are currently in the form of an animal. One assumes you could also legally eat it. Depends on the animal--check your local game and hunting license laws.
However, you should be aware that a killed enchanted animal often transforms back into a dead person, which can raise inconvenient questions. If you know the witch, sorcerer, elf, or other Person of Magic that has done the enchantment, you can check this out ahead of time. Be sure to take a business card in case you know of anyone else who badly needs to be transformed into a chicken and served up with sauce.
If an enchanted animal offers you three wishes, kill it immediately. This never turns out well. On the other hand, you'd be amazed at how much a hundred billion dollars can compensate for having a sausage stuck to your nose.
