Yesterday we had our pavo Salvadoreño, although the bird is commonly known as "chompipe". The difference from the typical USA style turkey is in the sauce/gravy and the stuffing. The stuffing has bread, spices, ground beef, and green and black olives. The gravy is actually more of a dark "relajo" tomato-based sauce, which has dried chile, peanuts, garlic and other spices, a few bay leaves, etc.
