I do know they used to substitute mashed potatoes for ice cream, which didn't last long enough under the lights.
I would imagine that nowadays they might make use of photoshopping techniques, too. Japan makes a fine art of creating fake food to put in restaurant windows, which has the same function as the photos in the fast food places. Many such around here.
