Reading about the Crusades it seems the Muslims were generous with converts. If you could avoid being killed in battle, everyone including Catholic priests were pardoned and set free if they converted.
Of course they were welcomed back by mother church when they were out of range of the Muslims. A few Hail Marys took care of it
