Species and environments go together. That's the natural part of natural selection. Indroduce a species to a new place it likes and it will thrive. Change a species environment and it will adapt, or die.
As environments change, some species go extinct, some thrive. As Nick points out, Northern Europe without the Gulf Stream might very well find a useful resource in resurected Pleistocene megafauna.
Sure, we should preserve the species we have. But that involves preserving their environments. Which is becoming more difficult to do with an ever increasing human population that needs resources.
Environments change, species respond. Sometimes species change environments. We, as a species, are really good at changing environments.
EDIT:
We are also really good at adapting.
