Am thinking of a regular 16' extension off to one side as a garage and utility room., so maybe the panels could be mounted from there?

Definitely

The lot you choose is going to be critical. Make sure you can fit the house on it, so the flat roof gets a southern exposure, without interference from trees as well. The sun is lower in the winter time too.
