Backup Exec is probably your best route to keep it low profile. You need to install the "remote agent" to the user's machine. Then when you run your backup from the server you can browse over to it and start backing up as long as the machine is turned on. There aren't any notifications that pop up on the client machine that would clue anybody into knowing it was being backed up. The only thing they would notice is a very active Hard Drive, but if run it over night or on the user's day off the user shouldn't suspect a thing. All the client could see from his computer is a program add/Remove Programs called "Veritas Backup Exec remote Agent for Windows Servers" which is 24 mb. Unless they are a powere user than they probably will leave it alone.
I did have some troubles setting it up, but haven't had any since. Its been so long though, that I don't remember what the troubles were. Since you already own the software to do this you could probably fool with it without raising any eyebrows.
Do you run a single tape drive or do you have a tape changer? If you have a changer, than you can probably work it into the schedule without too much fuss. A changer would make my life much easier. The cost is a little prohibitive though.
