Unfair to the animal involved
They seem to occasionally waffle on the question of whether this is cloning or another form of genetic manipulation. IMO, we shouldn't undertake such an endeavor simply because we can. If there's an evolutionary advantage to a cold-resistant elephant, nature will probably provide. If it doesn't, perhaps there's a lesson there for us. And there's a difference between a self-aware animal--that has an emotional life--and a single cell. This is an open invitation for unintended consequences.
