Clearly tagging it would be the first priority, but moving it (with a tug or whatever else) would be the most important thing we could do with Apophis. Gaining that experience would be invaluable should we be faced with a real threat in the near future.
Further, consider it the first step in the very long process of eventually moving a high value asteroid to the earth-moon lagrange point.
