I just hate pickled soggy beets. Why have American cooks always thought you have to cook veggies to death? I was raised that you simmered fresh green beans for a couple of hours or more with bacon and onion until they are soggy (called tender). Now I saute green beans (fresh) for a couple of minutes and they are downright delish!
