Seared Salmon

So, how do you fix yours?

I sear my salmon in a skillet in a trace of olive oil with just a tiny bit of salt and pepper.

For a sauce to serve with it, I mix
3 TBSP extra virgin olive
2 tsp. of white wine vinegar
2 tsp. Dijon mustard
2 tsp. of horseradish (drained).
1 TBSP Fresh or less of dried herbs - I use parsley and chives but tarragon works well, too.

Whisk it really good and add some parsley and chives to it. It is delish! If I have fresh herbs, I use those but dried work just fine. I found this recipe on Food Network a long time ago and adjusted it to my taste. I go a little heavy on the horseradish. Num num.
