Sausage, like most ethnic and cultural foods, is the result of clever cooks in difficult circumstances making something good to eat out of the bits the rich people didn't want.
What they called "soul food" back in my younger days--not sure what they call it now--falls into that category. Cajuns can make fabulous food out of things strained from swamp mud. I doubt if there's a famous Cajun recipe for filet mignon. Chinese cooking also comes from making anything remotely edible into something tasty. Same thing for the cooking of my Eastern European ancestors.
Alcoholic beverages came about for two reasons: One, they were fun to drink, and two, it was a way to turn perishable crops before the Age of Refrigeration into something that stored well, and had value. See also: cheese and smoked meat.
Necessity is the mother of gourmet cooking.
