I buy cheap chicken, whole, halves, thighs, not drumsticks, and tear the skin off. Comes off easily if one isn't too particular. Could do a better job with a knife, but I don't bother.
Throw it in a baking bag with garlic and lemon pepper, pop it into the microwave for 25 to 30 minutes (I like it moist and soft) and I'm in for what I regard as a good dinner. Or two or three.
(WinCo has lemon pepper in bulk. The damned "valve" stuck open when I was buying stuff for the summer, and I wound up with a bunch. Big bunch. You can only give away so much before folks have had enough. I'm using it on everything. It's surprisingly heavy when you are buying it by the pound. Multiple pounds.)
And usually I don't have a mess in the bowl.
Microwave the skin on paper plates and feed it to the dogs.
Somehow that seems awfully fast and easy. I'm not a cook, don't care to be, sponge off my gourmet friends as much as possible.
