I say it's raw fish and to heck with it.

Probably meant "sashimi." (We Californians are experts.) But I don't eat raw fish...too much chance of picking up some kind of weird cootie.

The whole sushi bar reinforces my theory on ethnic foods:

Ethnic foods are historically the foods of the peasants, the poor, and the downtrodden. They consist largely of things their rulers and overlords wouldn't eat on a bet, and so left those things behind when they walked off with all the good cuts of meat and the decent food. At some point, either by sheer exposure, or evolution (I'll die before I eat that!), these foods eventually became favored by these people.

Go over all the well-known ethnic foods you can think of in your mind. See?

And there wasn't a huge surplus of wood for cooking in Japan.
