I think they were on the Discovery and/or the History Channel. Sizeable teams of highly skilled demolitions experts often work for weeks to prepare a building for demolition. Like you said, they not only strip out as much as they can, they deliberately cut some structural members ahead of time. It's painstaking work by masters of the craft. The idea that someone could configure for controlled demolition some of the largest buildings in America while thousands of people still work there is so laughably absurd. Conspiracy nuts claimed the same thing about the Murrah Federal Building in Oklahoma City and they were just as stupidly wrong then, too, but pointing out the truth to these people is a waste of time. There is seldom a cure for willful ignorance.
