The "proof" of their existence must be in the "scientific" name "Ornithorhynchus anatinus" After all, who would go to the trouble of inventing such a name if the animal was mythical.
You can see a "water ouzel" for your self at the Georgian Bay Fish Camp. It is mounted and hanging on the wall. :-) Or at least it was few years ago. Is it real? I certainly could see the head and the tail of it and I could touch and feel their contours.
"The quote about the hunger for truth is true, except that when one finds it sometimes it's a lousy meal, and then the hunger is sated but there is a foul taste in the mouth. Sorta like eating a jackalope or water ouzel or platypus. And they aren't filling, as it's an imaginary meal".
It seems to me that many people do not want to experience the "foul taste" of truth.
There is a Greek Proverb about hunger which states that: "You cannot reason with a hungry belly; it has no ears". I feel that such a statement should not be twisted to apply to the mental hunger for truth and knowledge.
